When time permits, pulled pork is an easy dinner.  It takes a long time to cook (2-3 hours), but preparation time is minimal.

This recipe is a sweat and tangy version with a slight “Hawaiian” flavor.

Ingredients

  • 2 lb pork loin
  • 1 apple cut into chunks
  • 1 onion cut into strips
  • 1 green pepper cut into strips
  • 1 bottle Lawry’s Baja Chipotle sauce

Preheat oven to 350 degrees.

Spray the 20150909_201137 bottom of a baking dish with non-stick spray.  Place the pork loin into the baking dish.  Cover with apples, onion, green pepper and sauce.  Cover and place in the oven for 1 1/2  – 2 hours or until the pork is 145 degrees F.

With two forks shred the pork by piercing the pork with each fork and dragging the fork through the meat.  Continue until all the pork is shredded.   Stir the shredded pork and sauce until the pork is fully covered and evenly mixed.

Serve over rice or as a sandwich.

 

Alternative cooking method:

Place all ingredients in a crockpot.  Turn crockpot on low and cook 10 hours.  Shred pork  as directed above and enjoy.
