This is a nice alternative to beer brats and sauerkraut. It has tons of vegetables, so it is a little lighter and has a sweeter taste. The bratwursts get very soft, fall apart, and distribute throughout the pot when mixed. If you prefer the bratwursts to remain as whole sausages, pan fry them for about 10 minutes before placing them into the crockpot, and place them on top of the vegetables rather than below.
- 1 lb. Package of bratwursts
- 1 medium onion chopped into strips
- 4 carrots chopped
- 1 green pepper cut into strips
- 3 celery ribs chopped
- 4 red potatoes cubed
- 1 T caraway seeds
- 1 T basil
- 1 T whole cloves
- 2 lb jar of sauerkraut drained and rinse
Place sausage in crockpot. Top with onion, carrots, green pepper, celery, potatoes, spices, and sauerkraut. Cover and let cook for 8 hours.
