• 2 T butter
  • 1 medium onion diced
  • 1 T garlic powder
  • 3 T all-purpose flour
  • 4 c chicken broth
  • 20 oz. frozen broccoli
  • 4 celery stalks, chopped
  • 8 oz. shredded sharp cheddar cheese20151001_165255
  • 8 oz. diced ham

Melt butter in a large pot over medium heat.  Add onion and saute until onions are tender.  Add garlic powder and flour.  Whisk mixture to a paste.  Slowly add chicken broth. Whisk continually so the paste dissolves evenly and not clumpy.20151001_165453

Add broccoli and celery.  Reduce heat to medium low.  Simmer until vegetables are tender.  Using an emersion blender, blend the soup into small chunks, but not smooth.  Continue to simmer uncovered for the broth to thicken.  Add cheddar cheese and ham.  Add salt and pepper to taste.
