This is a nice light side for any main dish. Zucchini noodles - with equipment The zucchini strings don’t have the strength of regular noodles but they can still twirl around a fork.



  • 2 zucchini
  • 1/2 c parmesan cheese
  • 1T butter
  • 1/2t garlic powderZucchini noodles -  using equipment

Using a peeler, cut the zucchini into strings.  Cut the strings every once in a while, so they don’t get too long. Be careful to not slice your fingers.  Fasten the top of the peeler to the end of the zucchini.  This will protect your fingers from getting too close to the blade.

Zucchini noodles -  shreds

In a sauce pan bring 1/4 cup of water to a boil.  Add zucchini and steam for 5 minutes.  Drain water.  Add butter, cheese, and garlic. Stir until cheese is melted.
