This is a cold salad. I enjoyed this as a lunch on a hot day. But you could serve warm.
- 1 – 16 oz. package imitation crab
- 1 rib of celery, chopped
- 1 green onion, chopped
- 2 cups rice noodles
- 2 T cocktail sauce
Cook rice noodles as directed: Bring water to boil. Place noodles into boiling water for 5-6 minutes or until done to desired softness. Drain and rinse with cold water.
In a mixing bowl, combine crab, celery, and onion. Place crab mixture on top of noodles. Sprinkle with cocktail sauce and enjoy.
