Nice alternative to a breakfast burrito with salsa and cheese. You can pretty much put anything in a tortilla and it will taste good.
Makes 2 burritos
- 4 eggs
- Salt and pepper
- Dash of onion powder
- Dash of garlic powder
- Dash of parsley
- 3 maple sausages
- Two 10 inch whole wheat tortillas
- 2 tablespoons cream cheese
- Strawberry jam (optional)
In a small skillet cook the sausages. Remove from heat and cut into pieces.
Crack eggs into a bowl and beat them together with a whisk or fork. Heat skillet on medium-low heat. Spray with nonstick cooking spray and add eggs. Sprinkle with salt, pepper, onion powder, garlic, and parsley. Stirring constantly, mix eggs to cook thoroughly. Remove from heat, add sausage pieces, and stir to combine.
Spread 1 T of cream cheese into the center of each tortilla, top with eggs and sausages. If desired place jam on top of the eggs. Roll the tortilla into a burrito by folding three sides over the eggs. Roll toward the unfolded side.
Wipe the egg skillet with a clean paper towel to remove any egg debris. Over medium heat, brown the outside of the burritos.
The eggs look like bananas in the picture, but they are eggs.
