Not only is this part of a great song, it makes great seasoning for chicken and fills the house with smells of fall.
- 1T parsley
- 1T sage
- 1 T Rosemary
- 1 T thyme
- 3 pound whole organic chicken
Preheat oven to 350. Spray roasting pan rack with nonstick cooking spray and place it in the center on your roasting pan.
Remove neck and innards from chicken. Rinse chicken and pat dry. Combine all spices in a bowl. Rub on to the skin of the chicken inside and out.
Place chicken breast side down onto the roasting rack. This allows the juices from the dark meat to run into the breast meat as the chicken cooks.
Bake for 1-1/2 to 2 hours. Flip the chicken for the last 20 minutes to crisp the breast skin.
Allow the chicken to sit for 15-20 minutes before carving.
