Marie Calendars cornbread has been a favorite of mine since I was a little girl.  I remember our family going to the restaurant for my mom’s birthday and ordering a portion for the table.  Now, the cornbread is complementary, and you can make it at home.  Improving the their recipe is next to impossible, but modifying it with jalapenos and cheese makes for a completely different experience.

Jalapeno cheddar cornbread - ingredients

Ingredients

  • 1 package Marie Calendars Cornbread mix
  • 1 ½ c water
  • ½ c pickled jalapenos
  • 1 c shredded cheddar cheese

 

Preheat oven to 350 degrees.  Prepare an 8x8x2 inch pan by spraying with cooking spray.  You can also line the bottom of the pan with wax paper or parchment paper to make serving easier once it is done baking.

 

In a mixing bowl, combine cornbread mix and water.  Jalapeno cheddar cornbread - jalapenosBeat thoroughly until there are no more lumps in the batter.

 

Chop jalapenos into small pieces.  Add the jalapeno pieces to the cornbread batter and stir.

Pour the batter into the prepared baking pan.

Sprinkle additional cheese and jalapenos on top Jalapeno cheddar cornbread - pre bakedof the batter.

 

 

Bake for 45 minutes or until a knife pierced in the center comes out clean.
