Delicious wrap that makes a quick, healthy, light lunch. These can be made ahead of time, wrapped in plastic wrap and brought to work. Your coworkers will ask where you got them.
- 1 T onion and chive cream cheese
- 1 slice of ham
- 1 leaf of green leafy lettuce
- Marinated carrots*
- Marinated olives*
Spread cream cheese onto the tortilla. Place ham on top of the cheese. Place lettuce on top of the ham. Place carrots and olives in the center of the tortilla.
Roll the tortilla.

Peel and cut 1 or 2 carrots into 3 inch pieces. In a sauce pan over medium heat, bring water to a boil. Place the carrots into the water and boil for 5 minutes. Drain water.
Place the carrots and olives in a Tupperware container. Cover with Italian salad dressing and refrigerate overnight or until ready to use.
